Paleo Shrimp Pad Thai

I got this idea from a bunch of paleo pinterest posts. I'm a HUGE fan of thai food and it's something I'll definitely miss and crave if I can't find a good paleo substitute. Thanks to the internet, I have found a solution. I used THIS recipe for my first attempt - with minor adjustments. The only changes I will make for next time would be to add in diced jalapeño to the sautéed garlic, ginger and shallot and to up my chili sauce. I like it spicy!

prep work!

Ingredients
  • 1 spaghetti squash, cut in half, innards removed.  (Mine was HUGGGGEEEE, I have mad leftovers)
  • half a bag of cooked shrimp, thawed
  • 2 shallots, minced
  • 3 cloves garlic, minced
  • 1 tsp. fresh ginger, minced
  • ***addition idea for next time**** 1/2 a jalapeño pepper, minced
  • 1 large handful of bean sprouts
  • 1 large handful of shredded carrots (buy a bag - it's way easier)
  • 2 eggs, lightly beaten;
  • 5 green onions, sliced
  • Juice of 1 lime (maybe 2 - I love lime!)
  • 2 tbsp.  coconut aminos
  • 2 tbsp. honey
  • 2 tbsp. chili sauce (HEAPING for me.. add to your own tastes)
  • 2 tbsp. almond butter (i used crunchy raw almond butter)
  • 3 tbsp. coconut oil
  • 1/4 cup chopped cashews (I used raw, but any nut will do)
  • 1/4 cup fresh cilantro, chopped
  • Sea salt and freshly ground black pepper to taste
  • Cholula to taste

Alright - down to business.
  1. Preheat your oven to 400 F.
  2. Brush the inside flesh of the squash with 1 tbsp. of the melted coconut oil. Place both halves in the oven on a baking sheet, open side down, and roast for 40 min. Once done - set aside to cool.
  3. When ready, tear the flesh apart with a fork to get the spaghetti squash “noodles”. Put in bowl, set aside.
  4. In a small saucepan placed over low heat, warm up the lime juice, fish sauce, honey, chili sauce, and almond butter. Mix everything together in the pan until thick and smooth. Set aside.
  5. In a LARGE skillet, melt some coconut oil over a medium-high heat. Add the shrimp, cook for 1 to 2 minutes, and set aside.
  6. Add the shallots, garlic, ginger, and jalapeño and sauté for two more minutes.
  7. Add the bean sprouts and carrots, and cook for another minute.
  8. Pour the eggs into the center of the skillet, scramble, and combine with the vegetables.
  9. Add in the spaghetti squash, almond butter sauce and shrimp to the skillet and stir together.
  10. Garnish your dish with green onions, cilantro, and chopped nuts and season with salt, pepper and cholula.
  11. DIG IN.

I had a lot of spaghetti squash because mine was HUGE. I didn't use it all and probably should have even used less because my pad thai was slightly bland. I needed more sauce and flavor. Next time I'll up the spices and it'll be way better.

Spicy Veggie Pizza

Made just like my last pizza, I used a frozen Cappellos crust cut in half.

This time I added:
  • diced orange bell peppers
  • sliced raw jalapenos
  • very thinly sliced shallots
  • chopped asparagus
  • pre-roasted beets
  • chopped sugar snap peas

Put it in the oven directly on the rack and cook for 22 minutes.

Then I topped it off with halved fresh cherry tomatoes and my new favorite sauce - sriracha mayo.

Finito.

Paleo Hack Steak & Veggie Pizza

Get ready for a LIFE CHANGING pizza. Best part - it was totally freaking easy to throw together.

We're gonna call this a "hack" pizza because I didn't really make the crust, sauce or anything from scratch.

The main reason why this pizza is so amazing is this crust sent from heaven. I bought three of them when they were on sale at New Seasons in Sellwood. They were about 8$ each on sale at the time.

So all I did was preheat the oven to 400 degrees,  open the package straight from the freezer, take a giant knife and cut the pizza in half (because last time I made a frozen pizza, I ate the ENTIRE thing by myself). I added some all natural pizza sauce from New Seasons but olive oil would work well too!
Then I added all my toppings to the frozen pizza. This time I cut up
  • orange bell peppers
  • mushrooms
  • zucchini
  • spinach
  • roasted garlic (bought it pre-roasted in little packets from Winco)

You put the pizza directly on the rack (no pan) and cook for about 18 minutes. While that was going on, I cut up half a leftover ribeye steak into tiny pieces, seasoned with salt and pepper and then sautéed it for a couple minutes.

When the pizza looked golden brown, I pulled it out and added the steak (and some Cholula).
Greatest thing to hit my lips this week! And so so so easy.

How To Be Paleo On The Cheap

Learn to LIVE, LOVE, BREATHE winco foods.

Picture
  • Go there once every 1-2 weeks and stock up!
  • Use a shopping list if you need to, especially if you have recipes you wanna make the next week.
  • Be strict! Only meat, fresh veggies, maybe some fruit, maybe some sweet potatoes, squash, nut butter, sugar free/crap free sauces like BBQ, hot sauce, salad dressing, salsa, coconut oil, olive oil, balsamic vinegar.
  • READ EVERY LABEL. avoid all weirdness/sugar/dairy.
  • You're going to spend a lot up front, but then you're going to be VERY strict about eating from home, and prepping your food. Avoid throwing out food!
  • Make this food last by eating the fresh food first, then the frozen/dried or longer lasting items. Freeze whatever you don't eat after the first couple days.

Stock up on freezer friendly veggies and meats like cooked shrimp, ribs, steak, chicken, bacon, peas, onions, asparagus tips, brussell sprouts, butternut squash, spinach.

Don't buy bottle water, buy a filter!

Don't buy starbucks or coffee drinks, bring your own teabags and order a hot water to go!

Prep your food for the next day every single night.

Maybe it's just your lunch, maybe breakfast and lunch if you are always running out of time in the mornings.

Have healthy snacks ready to go: hard boiled eggs, cooked shrimp or chicken, berries or fruit with nut butter, chopped vegetables like bell peppers, cherry tomatoes, snap peas, cucumbers, hummus.

Keep healthy trail mix in your purse and/or car so you'll always have a snack around!
Buying in bulk is usually the cheapest way to go - and you can make your own mixes.

I was paleo once before in my lifetime - and I lost about 30 lbs. I looked AWESOME! I had a really great coach and personal trainer who sold me on the diet - and the results came relatively fast!

Somewhere down the line I lost my drive to be paleo, started eating bread again and gained back a lot of that weight.

I'm ready to dive back into the paleo pool once again! Follow me here on my journey BACK to SLIM LIVIN'!
